Growing up in Yorkshire we love the robust oaty taste of Parkin, which is traditionally served on bonfire night.

Running a coffee shop in the Surrey Hills and wanting to introduce a Ginger cake, I realised that our customers preferred a softer but not sticky ginger cake, so I developed a recipe which quickly proved to be so popular it became Mullins best seller.

Ingredients
